  • Temperature: maker: Temperature Adjustable — Between 32F - 65F.
  • Humidity: maker Starter Pack page lists 'Humidity Control — Between 50% and 85%' but also says the Starter Pack has 'No Humidity Control'; the Ultimate Bundle adds a humidifier preset to 75%. No user-adjustable humidity set-point is described.
  • Classed here as: Passive (salt block, tray or airflow).

Active means the cabinet adds or removes moisture to hold a level you set; fixed means a humidifier holds one level the maker chose; a salt block or water tray is passive. Why the difference matters

The two lists above are drawn from the maker’s own pages and prices, not from owner reports. Where owner discussion has been read it appears in its own section below, so the two are never mistaken for each other.

What owners say

From what 10 owners described in owner discussions between March 2021 and June 2025. Only reports from 2021 on are counted, after the relaunched PRO 40 went on sale in November 2020; earlier PRO 40 posts, the original countertop SteakAger and the Kingsford-branded models are excluded, as is one owner who describes theirs as an older model.

A 75-day ribeye, a 59-day tomahawk and a two-week duck have all come out of PRO 40s, and one owner who has run one for years says neither they nor friends with the same cabinet have ruined a cut. That owner liked it enough to move up to SteakAger's larger cabinet rather than switch brands.

The trouble owners report is mostly cold and ice. With the humidifier fitted, one owner gets frost thick enough to stop the fans within days, another defrosts with a hair dryer, and a new owner's water pan froze at 38°F. One unit's controller drifted between 34 and 43°F and kept resetting itself to 40°F; the company offered a replacement panel free.

The smoothest reports come from an owner running at the recommended 40°F without the humidifier, who has had no frost and saw humidity settle once the pellicle formed, and one at 38°F who rarely checks it anymore. Experiences with the company run from a phone call the same day to a broken unit that was ignored.

What owners like

  • Several owners report no lost meat: one says it performed flawlessly over several months, another has aged many successful primals in it, and one long-time owner, whose friends own them too, says none of them has ruined any beef
  • Long ages are possible in it: owners have taken a ribeye to 75 days and a tomahawk to 59
  • The humidifier add-on is optional for steak, by owners' accounts: one never bought it and saw humidity start in the 80s and settle to 50-60% once the pellicle formed, and another's humidifier only kicked in after about three weeks
  • When support answers, it is quick: one owner had the company on the phone immediately over an issue, another praises customer service, and a third was promised a new control panel free of charge
  • Not only for beef: one owner aged a duck in it for two weeks and called the result amazing
  • One owner thought the look and feel high quality, even while chasing a temperature fault

Common complaints

  • Frost on the back wall comes up from more than one owner, in 2021 reports with the humidifier fitted. One owner gets so much ice within days with the humidifier in that the fans stop and the cabinet has to go outside to thaw; another has the same problem and defrosts with a hair dryer. One owner set to 40°F has had none
  • Temperature control can wander: one owner saw swings from 34 to 43°F at a 38°F setting and a panel that kept jumping back to 40°F on its own, still happening more than two years later
  • Running cold can freeze the water pan: one new owner had the bottom pan turn to ice and had to raise the setting to 40°F
  • The humidifier needs watching on long ages. One owner saw humidity fall after two weeks, refilled the water several times, and ended with three weeks in the 40-50% range
  • The rear drain pan does not attach securely and sits over exposed mechanical parts, one new owner points out; another stuffs paper towel into the drain gap and checks it every two or three days
  • Support is not always there: one owner says a unit flat out broke and the company ignored the complaint
  • About two subprimals is the limit, and one owner moved to a cabinet five times the size, keeping the SteakAger for two- to three-week ages

Questions owners ask about the SteakAger PRO 40

Do I need the humidifier add-on?

Not necessarily. One owner who never bought it saw humidity start in the 80s after loading and drift to 50-60% once the pellicle formed, and another's humidifier did not switch on until about three weeks in. With the humidifier, one owner had to keep refilling it on a long age.

Does the PRO 40 ice up?

Some do. Two owners report frost building on the back wall until the fans stall, which they clear by taking the cabinet outside or using a hair dryer. One owner running at 40°F in a humid climate has had no frost at all.

What temperature do owners set it to?

38 to 40°F. One owner uses the recommended 40°F, another sets 38°F and rarely checks it, and a new owner went up to 40°F after the water pan froze.

What does the app do?

Monitoring, by one owner's account: it logs temperature and humidity, but the temperature itself is set on the cabinet.

How long do owners age in it?

Most ages owners mention fall between about 30 and 60 days: one owner's longest was 48 days, another uses 30 to 45, and one took a tomahawk to 59 and a ribeye to 75.
