7 shortlists, each saying what it ranks on
Nobody here is picking favourites and there is no test lab. Each list below is a filter and an order applied to the catalog, and it prints the rule at the top, so you can argue with the rule rather than with an opinion.
Dry-aging cabinets with active humidity control
17 qualifying items
Included when the maker describes hardware that holds a humidity set-point the owner chooses. A salt block, a water tray or a hygrometer readout does not count. Ordered by price.
Dry-aging cabinets that can be built in
18 qualifying items
Included when the maker says the cabinet may be built in. How it vents differs: some are rated zero-clearance, others need ventilation shafts or an open plinth, and each page quotes the maker's install note. Ordered by price.
Dry-aging cabinets under $2,000
6 qualifying items
Cabinets with a maker or US-distributor list price under $2,000. Ordered by price. Prices are approximate.
Dry-aging cabinets with the largest meat capacity
20 qualifying items
Ordered by the maker's own stated maximum meat load in pounds, largest first. Interior litres are not used: two cabinets of the same volume can hold very different loads. Cabinets with no stated load are left out.
Dry-aging cabinets with the lowest price per pound of capacity
20 qualifying items
List price divided by the maker's stated maximum meat load, lowest first. A cabinet with no stated load has no figure and is left out.
Dry-aging cabinets with an app
10 qualifying items
Included when the maker sells an app for the cabinet. Ordered by price. What each app does is in the maker's words.
Dry-aging bags, by price per bag
10 qualifying items
Pack price divided by the bags in it, lowest first. Bags are single-use.
A list needs at least 3 qualifying items to exist at all; anything shorter is a comparison with a headline on it. How the catalog is built.
