About

How this site works

What is here

26 dry-aging cabinets and 10 dry-aging bag packs from 9 makers, listed from $22 to $20,495, each with a page of its own, plus 7 computed shortlists, 35 head-to-head comparisons and 3 explainers. The catalog was last updated on 2026-10-23.

A product is listed only if it is sold new to US buyers by its maker or the maker’s US distributor. A cabinet that runs only on 220–240 V is left out, however widely it is resold by importers, and the reason is recorded with the research. Colour and door variants are one entry; different sizes are separate entries.

Where the figures come from

Every specification comes from the maker’s own product page, spec sheet or manual, or from its US distributor’s page where that is the only US seller. 63 source URLs are cited across the catalog, and every product page lists its own. Nothing is taken from a shop listing or a review site, and nothing is measured by us: there is no test kitchen and nobody aging meat on the site’s behalf.

Where a maker does not publish a figure for that exact model, the page says “not published”. A sibling’s number is never borrowed, a rounded figure is never made precise, and voltage is never assumed: 14 cabinets here are sold on US stores without a stated voltage figure, and their pages say exactly that.

How humidity is classed

“Humidity control” on a listing can mean very different hardware, so each cabinet is filed by what its maker describes. Active: a humidifier and/or dehumidifier holding a set-point the owner chooses (17 cabinets). Fixed: a built-in humidifier holding one level the maker sets (6). Passive: a salt block, a water tray or airflow, with no set-point (2). A hygrometer readout on its own does not make a cabinet active. Where the maker’s page does not say, the page says so rather than guessing. More on the four levels.

What is worked out rather than quoted

Price per pound of capacity. List price divided by the maker’s stated maximum meat load, for the 20 cabinets that state one. Interior litres are never converted into pounds.

Price per bag. Pack price divided by the bags in the pack.

What the extra money buys. Within one maker’s cabinets, a model is set against the cheapest sibling, and only the published fields that differ are named.

The conditions gauge. Each cabinet’s temperature and humidity ranges are drawn against the band a peer-reviewed review reports for dry aging beef. The band is a reference, not a grade.

Food safety

This site makes no food-safety claim of its own. Statements about safety on a product page are the maker’s and are attributed to it; the explainers quote research papers and the FDA by name. Nothing here certifies that any product or method is safe.

Why there are no star ratings

A rating would be shown only with a citable source that is not a shop. None of the 36 items has one, so no stars appear anywhere and no review markup is sent to search engines. Nothing is ranked by an in-house score: every list states the published figure it is ordered by.

Owner sentiment, and where it is missing

The strengths and trade-offs on a product page are drawn from the maker’s figures, prices and pages. Anything attributed to owners sits in its own section under its own heading, only for products whose owner discussion was read. Coverage today is 7 of 36, and the pages say so instead of showing an empty block.

How lists are ordered, and what this site does not do

The catalog’s default order is price, lowest first, and brand and type pages follow it. Every shortlist prints its rule and needs at least three qualifying items. Nothing is a paid placement, and no maker has any say in what appears or in what order. Prices are approximate list prices and will differ from what anyone charges today.

Safety notices

A recall or regulator notice involving a listed model is printed on that model’s page and wherever its card appears, with a link to the source, and a recall stops its structured data calling it available. No listed product carries one: no recall of a model in this catalog was found at the last update.

Who “we” is

A small independent project, not a publication. There is no editorial staff and no reviewer. Where the site points to something it gives the checkable basis, such as “the lowest list price per pound of stated capacity”, rather than an opinion from an implied expert.
