Range the research literature reports for dry aging beefthis cabinet, per its maker

  • Temperature: maker product page: one controlled zone, 34–50°F (the 2022 SL100 brochure says 32°F - 50°F).
  • Humidity: maker product page says 'managed humidity and steady circulation' but its own comparison table lists Studio's humidity control as '—' (Home and Pro: up to 98% RH); the SL100 brochure lists a digital hygrometer only. No humidifier or user humidity set-point is described.
  • Classed here as: Passive (salt block, tray or airflow).

Active means the cabinet adds or removes moisture to hold a level you set; fixed means a humidifier holds one level the maker chose; a salt block or water tray is passive. Why the difference matters

Where it can go

15.55 W × 21.45 D × 34.44 H in. Maker calls it a countertop unit that is freestanding with no built-in required, though it lists 34.44 in tall; the 2022 SL100 brochure lists Free Standing / Built In

What the extra money buys: The cheapest Steak Locker cabinet listed here. 2 pricier siblings: Steak Locker Home Edition G5, Steak Locker Professional Edition G5.

The two lists above are drawn from the maker’s own pages and prices, not from owner reports. Where owner discussion has been read it appears in its own section below, so the two are never mistaken for each other.

What owners say

From what 4 owners described in owner discussions between February 2022 and January 2025. Studio (SL100) owners only; reports about the older Steak Locker Home and Professional editions are excluded.

Forty pounds of bone-in rib roast across four shelves is the biggest load an owner reports, and the owners who have run it are happy with it: one calls the flavor difference worth the money, another has aged a number of steaks and had one at 42 days and counting, and a third says it works fantastic.

Getting started takes some reading, because owners find the manual thin. One owner learned more from the maker's blog posts than from the manual, and bought the Wi-Fi controller separately. Compared with the dry-age bags that owner used before, the Studio gave noticeably more tender beef.

What owners like

  • Owners are pleased with it: one is so glad to have bought it after aging a number of steaks, another calls it great and worth the money for the difference in flavor, and a third says it works fantastic
  • More tender than bag-aged beef, for one owner who used dry-age bags first and finds the Studio's results melt in the mouth whether the cut is bone-in or not
  • Room for a real load: one owner is running about 40 lb of bone-in rib roasts across all four shelves

Common complaints

  • The manual is little help: one new owner called it a little worthless, and another agrees it does not say much about how to use the fridge
  • One owner bought the Wi-Fi controller separately

Questions owners ask about the Steak Locker Studio

Is the Studio a step up from dry-aging bags?

For one owner who used bags first, yes: the bags never made the meat as tender, while beef from the Studio comes out melt-in-the-mouth tender, bone-in or boneless.

How much meat fits?

One owner has about 40 lb of bone-in rib roasts aging across all four shelves, turned so the bone ends face the door.

Where do owners learn to use it, if the manual is thin?

One owner found the maker's regular blog posts more useful than the manual, with tips and recipes written for the Steak Locker.
