Steak Locker Home Edition G5

110 V US outletActive humidity~$38 per lb of capacity

Steak Locker's 2026 G5 rebuild of its home cabinet, rated for 65 lb, with a new control board and embedded Wi-Fi. Instead of a water tray it recovers moisture from the evaporator and drives toward a set-point up to 98 % RH, and the 34-72 °F range covers cheese and charcuterie as well as beef. Every setting can be changed from the phone app. Steak Locker says earlier generations had app and connectivity problems, and that the G5 replaced that platform.

Range the research literature reports for dry aging beefthis cabinet, per its maker

  • Temperature: maker: Temperature Range 34°F – 72°F, one zone.
  • Humidity: maker: closed-loop system flash-heats frost off the evaporator and returns the moisture to the cabinet, driving to the user's setpoint up to 98% RH; no tray or reservoir to refill.
  • Classed here as: Active (holds a set-point you choose).

Active means the cabinet adds or removes moisture to hold a level you set; fixed means a humidifier holds one level the maker chose; a salt block or water tray is passive. Why the difference matters

Where it can go

23.42 W × 22.56 D × 32.28 H in.

What the extra money buys: Against the Steak Locker Studio, the extra ~$700 buys active humidity control, 35 lb more meat capacity, app monitoring and a warmer top setting (72°F vs 50°F). See the Steak Locker Studio.
